Tonight I Will Be Making…

Preparation method…proposed by James:

Heat the oil in a wok or large frying pan. Add the green curry paste and sugar and cook over a fairly high heat for about a minute, stirring with the lemongrass paste. Reduce the heat slightly and stir in the chicken pieces and lime leaves or zest until coated in the paste. Add the chilli and cook for a couple of minutes. Add the coconut milk and soy sauce and bring to a simmer, cooking for 25-30 minutes until thickened slightly. Stir in the coriander and lime juice. Check for seasoning, adding more soy sauce if needed.

The curry is now best left to sit for a few minutes so the sauce becomes creamier.

Serve with your choice of rice


Tonight I will be making…

Ok…seeing as my friends would like me to cook a ‘real meal, not just a cake!!!’ I have had to choose the only main course that has been suggested…well there were two suggestions, but Lucy is awkward and won’t eat omelet…and so, tonight I will be making this….

Pasta – cook til al dente (that means done, but slightly chewy).
Stir in a small tub of creme fraiche, chopped up smoked salmon and slices of spring onion/leek while the pasta is still hot.

Serve immediately. Add salt to taste, and plenty of pepper.

Sounds easy!!
